This tasty and health veggie lunch packs in 4 of your 5 a day and is great to eat at home or on the go!
Prep time: 20 minutesâ Cook time: 25 minutesâ Total time: 45 minutesâ Servings: 4â â Ingredients:â
2 x 400g cans of chickpeasâ
2 tsp olive oilâ
2 tsp ground cuminâ
2 tsp smoked paprikaâ
2 large avocados, chopped â
Juice of 1 limeâ
A small handful of coriander, choppedâ
8 large corn tortillas
1 fresh iceberg lettuce, shreddedâ
150g natural yogurtâ
480g jar of roasted red peppers, choppedâ
Instructionsâ
1. Preheat the oven to 220C/200C fan/gas mark 7.â
2. Drain the chickpeas and transfer to a large bowl. Add the olive oil, paprika and cumin. Stir the mixture to coat the chickpeas.â
3. Transfer the chickpeas to a baking train and roast for 20-25 minutes. â
4. While the chickpeas are in the oven, mix the lime juice, avocado, and coriander in a bowl. â
5. Warm the tortillas according to packet instructions and add the chickpeas, avocado, peppers, and lettuce. Drizzle with yoghurt and serve!
